01 / Rare Sugars

The enzyme behind rare sugarswas found in this soil.

In 1991, a microbe found in the soil at Kagawa University's Faculty of Agriculture here was shown to carry an enzyme that turns fructose into rare sugars. By 2002 a production route (Izumoring) was complete, and in 2007 the Miki Rare Sugar Research and Training Center opened. Of the 50-plus rare sugars known in nature, all can now be produced with this technology.

Named Niji-no-taki ("Rainbow Falls," 虹の滝) because sunlight through the spray forms a rainbow, they were designated a Kagawa Prefecture Natural Monument in 1976. Odaki drops 8 m, Medaki 11 m. Local legend says Kobo Daishi turned a white snake from a pond into the rainbow.
