01 / Frozen tofu
More than 50 factories in the early Showaera all closed in 1970.
Koridofu, frozen tofu, is what is also called koya-dofu. In Chihaya village (today's Chihaya district) it is said to have been made from the late Edo period, frozen naturally in a cold place. After artificial freezers allowed mass production around 1955, all the factories closed. Ten tools, including those for boiling and mashing soybeans, are village-designated Tangible Folk Cultural Properties.
