With the blade bent by "akita,"kombu is shaved paper-thin.

Oboro kombu (おぼろ昆布) is made by softening Hokkaido ma-kombu in vinegar and shaving its surface thin with a special knife. Bending the blade's edge slightly with a metal rod is called "akita" (アキタ), a word of unknown origin. It takes 10 years to become a full craftsman. Tsuruga makes about 85% of the nation's oboro kombu, and in 2025 the technique became the prefecture's first Registered Intangible Folk Cultural Property.
